Microgreens Are More Than a Garnish. They Deserve a Place on Your Plate.

I’ll admit it.

One of my favourite things about growing microgreens is watching the reaction when someone opens a fresh container for the first time.

Before they even taste them, they smile.

The colours are brighter than they expected. The leaves are standing tall. Everything looks alive.

Then almost everyone says the same thing.

“These will look amazing on my dinner tonight.”

They’re right.

Microgreens make almost any meal look better.

But as someone who grows them every week, I always find myself saying the same thing.

Don’t just garnish your meal with them. Eat them. Lots of them.

That’s how they’re meant to be enjoyed.

Somewhere along the way, microgreens earned the reputation of being a fancy garnish.

Maybe it’s because they’re served in some of the best restaurants in San Diego. Maybe it’s because you often see a delicate pinch sitting on top of a perfectly plated steak or seafood dish.

There’s nothing wrong with that.

Professional chefs understand presentation better than anyone.

A few vibrant pea shoots or deep purple radish microgreens can transform a plate before the first bite is even taken.

But that’s only part of the story.

Microgreens aren’t decorations.

They’re vegetables.

Fresh vegetables that deserve far more space on your plate than most people give them.

If You Bought a Bag of Spinach…

Imagine buying a bag of spinach.

You get home, open it, take out three leaves and carefully place them on top of your dinner.

Then you put the rest back in the fridge.

Nobody does that.

Yet that’s exactly how many people use microgreens.

Instead, try treating them the same way you would spinach, rocket or mixed salad leaves.

Grab a generous handful.

Pile them into your sandwich.

Mix them through your pasta after cooking.

Fill half your salad bowl with them.

Layer them into wraps.

Top your pizza after it comes out of the oven.

The more people do this, the more they realise microgreens aren’t just something pretty to look at—they become part of the meal itself.

The Conversation I Have Almost Every Week

When we deliver microgreens to a customer for the first time, the question is almost always the same.

People are often expecting some complicated answer.

Instead, I usually tell them something very simple.

Use more than you think you should.

That’s it.

A handful on scrambled eggs.

A thick layer inside a turkey sandwich.

Mixed into a rice bowl.

Folded into warm pasta.

Added to tacos just before serving.

Tossed through a fresh salad.

Once people stop treating microgreens as decoration, they suddenly start finding reasons to eat them every day.

One of My Favourite Lunches

Some of the best meals are also the simplest.

One lunch I come back to again and again starts with nothing more than a large bowl of sunflower shoots, broccoli microgreens and sweet pea tendrils.

Then I add sliced avocado.

A squeeze of fresh lemon.

Good olive oil.

Sea salt.

Freshly cracked black pepper.

Sometimes grilled chicken.

Sometimes smoked salmon.

Sometimes just a handful of toasted pumpkin seeds.

It takes five minutes to make, tastes incredibly fresh and leaves you feeling satisfied without feeling heavy.

That’s when microgreens stop feeling like an ingredient.

They become the meal.

Working with chefs across San Diego has taught me something.

Every ingredient has a purpose.

Microgreens aren’t chosen simply because they look beautiful.

They’re chosen because they bring balance.

Peppery radish microgreens cut through the richness of steak.

Sweet pea tendrils soften salty cured meats.

Sunflower shoots add crunch without overpowering delicate flavours.

Micro basil finishes Italian dishes with incredible aroma.

Red-veined sorrel brings a gentle citrus note to seafood.

The best chefs don’t add microgreens at the last second because they need colour.

They plan the dish around them.

One thing I’ve learned since starting Coastal Microgreens is that freshness isn’t just about appearance.

It changes the entire experience.

We’ve all bought bags of salad that looked great in the shop but turned limp a couple of days later.

Fresh microgreens are different.

Because we harvest close to delivery, many of our customers tell us they’re still enjoying their greens weeks later.

That means fewer trips to the grocery store.

Less food waste.

And fresh ingredients waiting whenever inspiration strikes.

Whether you’re making breakfast before work or preparing dinner for the family, that’s something you really notice.

Why Local Growing Matters

There’s something satisfying about knowing where your food comes from.

Every week we’re harvesting microgreens here in North County San Diego before loading the delivery vehicle for homes in Oceanside, restaurants in Carlsbad, cafés in Encinitas, caterers in La Jolla and customers throughout San Diego County.

Those greens aren’t travelling across the country or sitting in multiple warehouses before they reach your kitchen.

They’re grown locally, harvested with care and delivered while they’re still at their best.

For me, that’s one of the biggest advantages of buying from a local farm.

More Than Just Home Cooking

Although many of our customers are families looking for healthier meals, we also work with restaurants, private chefs and caterers throughout San Diego.

A caterer preparing hundreds of wedding meals needs ingredients that arrive looking exactly as expected.

A chef needs consistency every single week.

Freshness.

Colour.

Clean stems.

Reliable quality.

Those details matter when every plate represents your business.

It’s something we think about every time we harvest.

The Surprise That Made Me Smile

One of the nicest compliments we’ve ever received didn’t mention flavour.

It wasn’t about presentation either.

A customer simply said,

“I never realised how often we’d use microgreens.”

That’s exactly what I hoped would happen.

People order them thinking they’ll save them for special occasions.

A few weeks later they’re putting them on omelettes, sandwiches, soups, pasta, tacos and salads without even thinking about it.

They’ve become part of everyday life.

That’s when you know something has found its place in your kitchen.

Can You Eat a Whole Salad Made from Microgreens?

Absolutely.

In fact, I think more people should.

Different varieties bring different flavours and textures, so mixing them together creates something that’s far more interesting than a standard bag of lettuce.

Try combining broccoli microgreens, sunflower shoots, pea tendrils and a little spicy radish.

Add avocado, cucumber, tomatoes, grilled chicken or salmon and finish with a simple lemon vinaigrette.

It’s colourful, fresh and incredibly satisfying.

Once you’ve tried a salad like that, you’ll probably never think of microgreens as “just a garnish” again.

When we started Coastal Microgreens, our goal wasn’t simply to grow beautiful greens.

It was to help people enjoy fresher food.

Whether that’s a family trying to eat more vegetables, a chef creating a memorable dining experience or a caterer serving hundreds of guests, fresh ingredients always make a difference.

If you’ve only ever sprinkled a few microgreens over your dinner, here’s my challenge.

Next time, don’t reach for a pinch.

Reach for a handful.

Because microgreens were never meant to sit quietly on the edge of the plate.

They deserve to be right in the middle of it.

At Coastal Microgreens, we’re proud to grow fresh, locally harvested microgreens and edible flowers for homes, chefs, restaurants and caterers across Oceanside, Carlsbad, Vista, San Marcos, Encinitas, Solana Beach, Del Mar, Poway, La Jolla and the wider San Diego area.

Whether you’re looking for convenient weekly home delivery, a dependable supplier for your restaurant, or premium microgreens and edible flowers for your next catered event, we’d love to help.

Freshly harvested. Locally grown. Delivered with care.
